The number and size of the holes in the bottom of the sieve directly influence the coffee extraction. These holes are called Total Open Area (TOA). The DEX sieve has 872 high-precision filter holes that increase the extraction rate and improve the crema.
The DEX sieve has straight walls and a flat bottom, resulting in optimal pressure distribution when tamping. The rectangular hole pattern ensures even water flow, and the holes are graduated, resulting in better extraction.
