After roasting, the coffee beans continuously release carbon dioxide. During extraction, this carbon dioxide can impair the coffee grounds' ability to absorb water effectively, leading to incomplete extraction of the aroma. The pressure difference between the inside and outside of the container automatically releases the carbon dioxide, preventing foreign gas from entering, thus preserving the beans and preserving their flavor.
